Stir Fry Chicken

Put oil in pan and add the leek, let that cook for 1 minute.
Add the rest of ingredients (except the avocado and chicken) and cook for a further 5 minutes.  If the pan gets too dry add a little water, the vegetables will steam slightly.
The vegetables are better if left a bit crunchy
Place on a plate when ready.  Top with the chicken and avocado.

  • 1 tsp olive oil
  • large handful thinly sliced leek
  • 1 carrot
  • 1/2 red capsicum
  • 1/2 broccoli head
  • handful of sliced red cabbage
  • salt and pepper to taste
  • 1/2 avocado
  • 100g cooked chicken


Note: you can add some curry powder to the chicken to spice it up.
