Spicy Red Beans

Add oil to a pan and gently saute the onions, add the salt and spices and allow to cook for 1 minute. Add the capsicum and mushrooms and cook for 2 minutes. Then add the chopped tomato, tomato paste, kidney beans and some liquid from the beans. Cook for a further 5-10 minutes. Serve with brown rice and steamed asparagus.

  • 2 tsp olive oil
  • 1/2 red onion chopped
  • 1 tsp salt
  • 2 tsp smoked paprika
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 cup sliced red capsicum
  • 1 cup chopped mushrooms
  • 1 tomato
  • 2 tbsp tomato paste
  • half can of red kidney beans
  • 1/2 cup cooked brown rice
  • steamed asparagus.
