Green Cheese

Mix all the ingredients together using a high speed blender.

  • 2 cups soaked cashews (soak for 4-6 hours)
  • Juice of 1 lemon
  • 3 cloves garlic
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp apple cider vinegar
  • handful of washed kale

You can make this into a dip without any further instructions!

To make the cheese slices
You will need a dehydrator for this or you can bake at a very low heat (45 degrees).
Lay out baking paper on your dehydrator tray and spread the mixture  so it is thin and even. If using an oven lay the baking paper on a baking sheet.
Dehydrate or bake for 12 hours.


Break into pieces and serve with your favorite crackers and toppings.
These will keep in the fridge for a few weeks in an airtight container.


You will find this to be as satisfying as regular cheese.
