This is a really simple dish and very satisfying.
Dry roast the seeds in a pan at a low/medium heat until lightly toasted and set aside. You can mix them together or roast them separately.
Steam the broccoli and cauliflower for 3 mins and place into a serving plate,
preserve the liquid.
Add the oil to a pan and gently saute the leek, pumpkin, garlic, salt and pepper for 5 mins after which add some liquid from the steamed veg to the pumpkin and cook until tender.
When ready mix in with the steamed veg. Sprinkle with the seeds and voila!
