This recipe is quick and easy and a meal in its own right, but could also be a nice addition to any meal.  Slice the corn off the cob length ways, add all ingredients to a bowl and enjoy!

  • 1 sweetcorn cob
  • 1 1/2 medium grated beetroot
  • 2 TBS sprouted mung beans

Mung Beans
These are quick and take a couple of days and they are ready to eat.
soak the beans overnight, then drain the water and rinse them off.

They are now ready to sprout and prefer a dark place. Rinse daily.

I have a custom designed tray with holes in it to make it easy to rinse off the sprouts but you can also use a jar with holes pierced in the lid, or  other creative ways
