Wholesome Pumpkin Soup

The Soup:

  • 1/2 pumpkin
  • 1 red onion
  • 1 med potato
  • 1 tsp curry powder
  • 1 tsp garlic
  • salt and pepper to taste

For the soup combine all the above ingredients and cook until tender.  Using a stick blender mix to a smooth consistency.

Added Ingredients:
In a pan add the oil, garlic, onion and pumpkin and saute for 10 mins.
Add the cauliflower and lentils and cook for another 5 mins.

  • 2 tbsp olive oil
  • 2 cloves garlic
  • salt to taste
  • 1 onion
  • 1/4 pumpkin
  • small cauliflower
  • can of brown lentils and liquid.

To Serve:
Place the soup in a bowl with 2 tbsp of added ingredients, add the avocado and serve.
